What it is
The Dortmund style, sitting squarely between its neighbors: stronger and fuller than a pils, drier and more bitter than a Helles. Sulphate-rich water gives a firm mineral bitterness that keeps the malt honest. Balance is the entire point of the style.
Flavor
Floral, with room for spice or herbal.
Grainy and bready/biscuit, with room for sweet/honey.
Clean, with room for sulfur.
