What it is
A Märzen brewed with beechwood-smoked malt, so woodsmoke sits over toasty amber malt. The smoke has to marry into the malt rather than dominate, and should never read as ash, soot or bacon. Underneath the smoke it still has to be a clean, well-lagered German amber beer.
Flavor
Hops stay in the background: none of their character belongs.
Bready/biscuit, toasty and smoke, with room for grainy, sweet/honey or caramel.
Clean, with room for sulfur.
