What it is
The fullest of the three Scottish ales, with a richer caramel-and-toffee malt base and enough bitterness to balance rather than merely support it. Fermentation is cool and clean, so the malt stays in sharp focus.
Flavor
Hops stay in the background: none of their character belongs.
Grainy, caramel and sweet/honey, with room for bready/biscuit, toasty, dark fruit or coffee/roast.
Clean, with room for fruity esters.
