What it is
A blend of young and old lambic refermented in the bottle, giving champagne-like carbonation over a very dry, very sour base. The blender is the author here: the goal is complexity and balance between fresh acidity and mature, leathery funk. Should be effervescent, not flabby.
Flavor
Hops stay in the background: none of their character belongs.
Grainy, with room for bready/biscuit or sweet/honey.
Tart and funk, with room for fruity esters.
