What it is
Lambic refermented on whole fruit — traditionally sour cherry or raspberry — until the sugar is gone and only fruit character and acidity remain. The best versions are dry and tart with the fruit woven into the wild-yeast funk rather than sitting on top of it as sweetness.
Flavor
Hops stay in the background: none of their character belongs.
Grainy, with room for bready/biscuit or sweet/honey.
Tart and funk, with room for fruity esters.
