What it is
Beer soured quickly and cleanly by Lactobacillus alone, with no Brettanomyces and no barrel funk anywhere in the profile. The result is bright, simple lactic acidity over a light malt base, finishing crisp and refreshing with almost no bitterness.
Flavor
No flavor wheels for this one. Its character comes from something the wheels do not measure: fruit, spice, wood, smoke, or a base style of the brewer’s choosing.
