What it is
A beer whose defining character comes from Brettanomyces rather than souring bacteria — tropical fruit, hay, leather or smoke depending on the strain, over a very dry finish. Acidity should be low; if the beer is properly sour it belongs elsewhere in this category.
Flavor
No flavor wheels for this one. Its character comes from something the wheels do not measure: fruit, spice, wood, smoke, or a base style of the brewer’s choosing.
