Bitter without the preservative power of hops, so a gruit built on it keeps poorly and wants drinking young. Use the flowering tops.
Description
The commonest gruit herb, bitter and faintly medicinal with a sage-like aroma, used to balance beer before hops took the job. Still the starting point for anyone building a gruit.
