Description
High-protein Riverina barley kilned the moment it chits, so the big proteins and beta-glucans a full modification would break down survive — 750 mg/l of wort beta-glucan against a normal malt’s 50. Dosed at ten or fifteen percent for foam and haze stability. Voyager publish no diastatic figure, so that one is class-typical for a chit malt.
