Description
Pale malt smoked over apple, cherry, pear or beech wood, so the smoke reads fruity and mild rather than the savory beechwood of a Franconian rauchmalz. Total phenols run 4–10 ppm and the low process temperature leaves the enzymes intact, which is why Viking allow it to 90 % of the grist. No diastatic figure is published, so that one is class-typical.
