Description
Pilsner malt from null-LOX barley: the lipoxygenase that drives staling is simply absent, which measurably lengthens flavor stability. Kilned to 80–85 °C and in every other respect a straight pilsner malt. Viking publish no diastatic power for it, so the figure here is the one their ordinary pilsner malt carries.
