Before you use it
Fresh zest can substitute at roughly a third the weight, but take only the colored layer — the white pith is where the astringency lives.
Description
Dried peel from sweet oranges, giving a rounder, jammier citrus note with far less bitterness than the Curaçao variety. Often blended with bitter peel to soften a witbier or lift a Belgian pale.
