Description
Raw wheat gelatinised between hot rollers, so it converts in an ordinary infusion mash and needs no milling. It tastes grainier and more rustic than malted wheat, and its protein is what holds the haze in a witbier or NEIPA and the foam on top. Color, extract and diastatic power are not published, so those figures are representative.
