Pick the pale new tips only, and add them late: a long boil turns them piney and harsh. Fresh and frozen both work, dried is a poor substitute.

The bright new growth picked in spring, carrying citrus and resin far removed from the cough-syrup note that mature needles give. A colonial-era beer ingredient that survives in spruce ales and in modern farmhouse brewing.
