Before you use it
Buy it as brewing or cigar-box cedar and never substitute a true cedar, cypress or thuja, which are aromatic for reasons that are not food safe. It is also faster than oak, so start at a third of an oak dose and taste early.
Description
Not a cedar at all but Cedrela odorata, the wood cigar boxes are made from, and it tastes like one: clean sandalwood, cigar box and a dry white-pepper snap with none of the vanilla oak brings. Used in IPAs, wood-aged lagers and barleywines where the wood should read as aromatic rather than sweet.
