Before you use it
Dose is per EBC unit rather than a fixed rate, so it scales with how far the color has to move. Being Röstmalzbier it is a beer ingredient under the Reinheitsgebot, which is why German breweries can use it where a caramel coloring would be refused.
Description
Weyermann's liquid roasted-malt extract, vacuum-concentrated from Carafa Special to 8100-8600 EBC. It is here rather than among the fermentables because it is not a malt: it carries no fermentable sugar, no alcohol and no diastatic power, and it is dosed by volume rather than weighed into a grist. What it buys is color without roast flavor — a schwarzbier that stays smooth, or a dunkel corrected at the end of the boil instead of re-designed at the start of it.
