Before you use it
The fine hairs around the seeds are a genuine irritant, so use split and de-seeded hips or a muslin bag and do not rack the sediment. Dried hips are stronger than fresh by weight.
Description
The fruit left after the rose flowers, giving a tart, faintly apple-and-hibiscus fruitiness and a warm amber tint. A country-wine and farmhouse ingredient that suits fruited sours and dry ciders.
