Description
Sold as Pasteur Champagne until Red Star tidied the range: a bayanus strain that ferments hard and bone dry to 18 % and shrugs off sulphite, cold and fructose-heavy musts. Brewers keep it for bottle-conditioning big beers, for hard seltzer, and for rescuing a barleywine that has stopped moving — its profile is neutral enough to leave the base alone.
