Description
Raw hard red wheat: harder, smaller kernels than the white grain and a slightly tart, fruity edge to the grain flavor. The starch is ungelatinised and the protein high, so it wants a protein rest or a cereal mash and a well-modified base malt to convert it. Half the grist is Rahr's ceiling; lambic and Flanders red are where it belongs, along with anything that needs haze and foam. Rahr publish neither extract nor color for it, so both are class-typical here.
