Description
The six-row half of the American brewing tradition: more husk, more protein and more enzyme than any two-row, and correspondingly less extract. That surplus enzyme is the point — it converts a grist loaded with corn, rice, flakes or wheat malt that brings none of its own, and it is what a historical American lager was actually built on. High rates may want a protein rest. Rahr publish no Lintner figure for it, so the diastatic power here is typical of the class.
