Description
North American two-row germinated deliberately slowly, so more insoluble protein stays in the kernel: less extract than Rahr's other pilsner malts, and in exchange more flavor, more yeast nutrition and better foam. The lower diastatic power is a feature if you step-mash, since some starch is left to convert at the higher rest.
