Description
Rahr say it plainly: this is not a source of flavor or extract, it is a source of enzyme. Over 220 Lintner, high alpha amylase and plenty of free amino nitrogen, sold to convert large fractions of unmalted corn, wheat or rye flakes and to feed the yeast while doing it. Ten to twenty percent of a heavily adjuncted grist is the brewing use. Page and info sheet disagree on color and moisture; the product page figures are stored.
