Description
Rahr's answer to chit malt rather than to Carapils: under-modified and high in protein, so it builds body, stable haze and a lasting foam stand while adding almost no color. Ten percent is the rate Rahr talk about for a hazy IPA, and the same addition firms up a pils. Expect bready, grainy, faintly raw-barley flavor at the top of that range.
