Description
Barley malt soured with its own lactobacilli, used as a grain you can weigh instead of an acid you have to pipette. Roughly 1 % of the grist drops mash pH by about 0.1, which is how brewers on alkaline water pull a pale mash back into range without touching the ingredient list. The maltster publishes no extract or diastatic power, so both figures here are representative.
