Description
A carapils-style malt whose starch is converted to dextrins the yeast cannot ferment, so what it adds is body and foam rather than alcohol or color. Fermentability is capped at 50 %. It carries no enzymes and needs a well-modified base malt beside it; The Swaen push it as far as half the grist in alcohol-free beers, where thinness is the problem to solve.
