Description
Germination is cut short at the chit stage, so most of the grain is left unmodified and the large foam-positive proteins survive. Added at a few percent it thickens the head and the body without touching color or clarity. The published extract of 50 % is low by design; the maltster does not publish a diastatic power, so the figure here is a representative one and this malt should never be counted on for conversion.
