Description
Made from green malt kilned in the drum at a held-down temperature rather than roasted, which keeps chocolate, coffee and caramel in and leaves the burnt notes out. That gentleness is why it can go to nearly a third of the grist — enough to build a whole historic brown porter rather than just tint one. Swaen say up to 30 per cent of the grist; this catalog caps roasted malts at 20, which at 160 °L is already a very dark beer.
