The aroma is fragile and mostly boils away, so treat it as a whirlpool or secondary addition rather than a boil spice. It is related to cashew and mango, so it is worth naming on the label for anyone with a tree-nut allergy.
Description
Not a pepper at all but the dried berry of a Peruvian pepper tree, and it behaves nothing like Piper nigrum: sweet, resinous and faintly floral, with a rose and juniper edge and only a trace of heat. It suits pale saisons, witbiers and gin-adjacent beers where black pepper would be too coarse.
