Before you use it
Use food-grade brewing wood and never incense sticks or smudge bundles, which are often treated and are not made to go in a drink. Aromatic enough that it turns from perfume into pot-pourri quickly, so dose it like amburana rather than like oak.
Description
Bursera graveolens, the South American wood that gave a well-known imperial stout its name, contributing incense and resin, a cool minty top note and a coconut-vanilla sweetness underneath. At home in imperial stouts and dark strong ales where there is enough beer to carry it.
