Description
Wheat heated until the grain bursts, so it gelatinises in the mash without ever being malted. A few percent buys head retention and a firmer protein structure in a bitter; Muntons reckon three or four times that holds a stable haze in a hazy IPA. No enzyme of its own, so the barley malt has to convert it.
