Description
What is left after cane sugar is crystallized out, and the most aggressive of the traditional sugars: liquorice, burnt sugar, iron and a mineral bitterness that carries right through fermentation. Nearly a quarter water, and a real share of the solids is ash and non-sugar organics, so it yields only about 26 points per pound against sucrose 46. Two to five percent is plenty in a stout, a porter or a rum-barrel beer.
