Description
The other estate rye, and the pale one: heirloom spring rye germinated slowly through the high-desert autumn and dried on moving air rather than in a hot kiln, which is what keeps its floral character intact. Rimrock is the same grain taken to a Vienna color, so reach for Kaskela when the rye should stay bright. Sticky mash above about 20 %.
