Before you use it
Use the root, cut or shredded, rather than confectionery licorice or the black sticks sold as sweets — those are mostly sugar, anise and molasses and will do something else entirely. Glycyrrhizin is a genuine foam stabilizer at these doses, which is a bonus in a stout and a nuisance in a fermenter with no headspace.
Description
Glycyrrhiza glabra, the historical botanical of foreign extra stout, Baltic porter and the English winter warmer. It reads as sweetness without adding sugar, rounds the edge off roast malt, and leaves a body and a mouthfeel that the gravity alone does not explain.
