Before you use it
Bruise the stalks and use the pale lower third; the dry upper leaves are mostly grassy. Boiled hard the citral is driven off, so keep it late and low.
Description
Fresh stalks bruised and steeped late, giving a clean lemon-citrus lift without the pith or rind bitterness that citrus peel brings. Suits witbiers, saisons and pale ales that want citrus from something other than the hops.
