Before you use it
Fresh zest can substitute at roughly three times the weight of dried, and in both cases take only the colored layer — the white pith carries the astringency. Lemon oil fades faster in the package than orange does, so a beer built on it is best drunk young.
Description
Dried lemon zest, sharper and higher-toned than either orange peel and with almost none of their marmalade sweetness. It lifts a witbier or a saison towards lemonade, and sits well under the citrus hops in a hazy pale ale where a hop charge alone reads flat.
