Description
Milk sugar, which brewing yeast cannot ferment at all — every point it adds stays in the finished beer as residual sweetness and body. Carried here as the monohydrate, so about 5 % of the weight is water of crystallization. Dissolve in the boil; 4–10 % suits a milk stout or a pastry sour.
