Before you use it
Crush the berries to open them. Use the culinary species and not an ornamental garden juniper, several of which are toxic.
Description
The defining botanical of sahti and of the older Nordic farmhouse beers, giving resin, pine and gin-like aromatics. Traditionally the whole branch lines the lauter tun and does the filtering as well as the flavoring.
