Description
A Jasper isolate that acidifies and ferments wort in a single pitch, reaching pH 3.0–3.5 depending on conditions, with a fruity character alongside the acidity. Unlike a Lactobacillus it can carry the fermentation without a co-pitch, though it is slower than a conventional ale yeast. Oxygenate well and keep it warm start to finish — below about 27°C it can stall.
