Description
The second grade of the British invert scale, cooked on from No. 1 until it turns amber: light toffee and a suggestion of dried fruit, without the liquorice edge No. 3 carries. The traditional sugar for best bitter, ESB and dark mild, and the period-correct choice for a Victorian recipe. Roughly a quarter water, so near 36 points per pound.
