Description
The palest grade of the traditional British invert scale: cane syrup hydrolyzed to glucose and fructose and cooked only briefly, so it sits a shade or two darker than clear sugar. Faint honey and light caramel, and it ferments out as completely as table sugar. About a quarter water, so it yields near 36 points per pound rather than sucrose 46. At home in an ordinary bitter, a best bitter or a pale mild.
