Description

A wild Saccharomyces quick enough to finish a primary in under a week. Held hot it gives saison-like phenols, held cool it comes out clean, and it suits kettle sours and mixed fermentations either way. PCR-confirmed STA1. Attenuation is published as 90 % and up, so the upper bound here is ours.
