Description
Arizona-grown Czech-style pilsen malt held deliberately low on protein modification — Kolbach 35.6 per cent — so a double or triple decoction still has body and foam to work with. The enzyme reserve is unusually deep for a pilsen malt, which is what carries an all-malt mash through three thermal rests.
