Before you use it
Pick the flowering tips in late summer and shake them out first, since the plant hosts a good deal of insect life. Woody stem contributes nothing but tannin, so strip it.
Description
The flowering tops of ling heather, and the botanical behind Scottish heather ale: a dry, faintly smoky floral note with a soft bitterness of its own. Traditionally a large charge, because the flavor is gentle for the volume of plant material.
