Before you use it
Dissolves slowly in cold water — stir it in early or add it to the mash directly. Past roughly 300 ppm sulfate the bitterness turns thin and minerally rather than crisp.
Description
The workhorse salt for hop-forward beer: it supplies calcium for mash pH and yeast health, and sulfate to sharpen bitterness into something drier and more assertive. Burton-style pale ales lean on it heavily.
