Description
Premium 2-row barley germinated only to the chit stage, so the large foam-positive proteins and beta-glucan survive that full modification would break down. Added at up to 10 % it builds haze, body and head retention. The published 50 % extract is low by design — this is a functional additive, not a fermentable base — and GWM do not publish a diastatic power, so it should never be counted on to convert anything.
