Before you use it
It carries genuine bitterness alongside the aroma, so it stacks on top of the hops the way bitter orange peel does. In a beer already at 60 IBU that is a bigger contribution than it looks.
Description
Dried grapefruit zest, the pithiest of the citrus peels and the one that reads closest to hops. It reinforces the grapefruit note in Cascade, Centennial and Simcoe rather than adding a spice character of its own, which is why it turns up in IPAs more often than in Belgian beers.
