Description
Partially inverted cane syrup — the tinned syrup sold for baking, and a fair stand-in for a pale British invert when No. 1 is not to hand. Faint buttery caramel and vanilla over a pale gold color, and it ferments almost entirely away. About 17 % water, so it yields near 38 points per pound. Ten to fifteen percent thins the body of a bitter or a strong ale without leaving much flavor behind.
