Description
Malted wheat as a class: higher extract than barley malt, no husk to lauter with, and the protein that gives a weissbier its haze and a lasting head. Softer and breadier than flaked wheat, which is the unmalted grain. Above about half the grist, expect a slow run-off unless rice hulls go in with it.
