Description
Pilsner malt sprayed with its own lactic acid and dried, which is the Reinheitsgebot-legal way to acidify a mash. One per cent of the grist drops the mash roughly a tenth of a pH point. No usable enzyme of its own despite being sold as a base malt. Sauermalz and sour malt are the same thing.
