Before you use it
Dose at mash-in, not later — wort pH favours chelation and the metals need to be bound before they work through the boil. Slurry the powder in at least ten times its weight of water first; dry clumps never dissolve. It does little to copper or manganese, so it is not a complete metal fix.
Description
An ellagitannin, usually sold as 90 % pomegranate extract, that chelates iron in the mash so it cannot catalyze Fenton oxidation. The most effective of the common brewing chelators at dropping wort iron and radical formation, which is why it has become a flavor-stability tool rather than a fining.
